【到東海岸當啤酒醫生】
過去兩天,我前往東海岸的一間啤酒廠擔任顧問。我的任務之一,是從原料到製程各環節,從麥汁製備到發酵熟成,診斷啤酒的品質問題,並提出可行的改進方案。第一天視察結束,我整理出十幾項改進重點,但是最關鍵的問題,卻是在踏進酒廠十五分鐘就發現的——麥芽品質。接著在糖化區、煮沸區發現一連串的症狀,都指向麥芽品質不佳。原料使用好的麥芽,才能得到好的麥汁,也才有機會釀出好的啤酒。
【Doctoring a microbrewery】
During the last two days, I was consulting a micro-brewery on the east coast of Taiwan. I was lucky enough to pin down the main problem within a few minutes. The poor quality of the malt causes almost all the problems that I found later on. It's awfully true saying that wort is the root of beer. Only with good wort, can we brew good beer.
